Breads and Pastas

What can we do about BREAD? Wheat is SUGAR. If you put a piece of wheat bread in your mouth and test your saliva, your meter will read HIGH. It is a rocket ship for blood sugar and there is no way to outsmart it with insulin. It’s a definite way to take off on a bad start for the day. 

But guess what?!! There are SOOOOO many options to replace bread that are SMART CARB and SAFE. They aren’t as easy as or cheap as going to Kroger and buying a bag of Wonder Bread…but the pay-off can’t compare.

There are several mixes you can buy. Follow these people on Facebook. They often run sales. Sign up for emails to receive coupons in your inbox.

These brands are found locally, usually at Walmart or Whole Foods

  • Duncan Hines KETO mixes 
  • Miss Jones Baking Co. KETO mixes
  • Unbun

There are SO MANY ways to bake your own breads, bagels, muffins, pancakes, tortillas and treats.  

There is only ONE store bought bread (that I’ve found) that works. Unbun (bagels, bread, buns, tortillas, pizza crusts and rolls). I find it at Whole Foods. ALL other breads (no matter If it says KETO or not) contain things like RICE, WHEAT, POTATO, CASSAVA, TAPIOCA FLOUR, ARROWROOT. All of those ingredients spike.

Remember- it’s NOT the carb count. Carbs are not created equal, and those equations will never get you to achieve normal blood sugars. It doesn’t matter who tells you that you can. Their goals may be different than ours. We aim for NON-DIABETIC A1Cs. (Less then 5.7). We aim for LOW standard deviations (low 20s or less). We use FOOD as a TOOL to eliminate URGENT lows, UNCONTROLLABLE highs and constant blood sugar swings. We focus on SAFE NOW and ZERO complications later in life.
